To make a cauliflower puree, add 2 cups of cauliflower that has been steamed, 1 garlic clove and 2 tsp. Olive oil (heated). Salt-and-pepper could be added according to taste.

This mixture is blended at a fast till creamy. It can be presented as a side plate on its own or can be employed as a garnish for chicken or grilled salmon. Since the flavor of cauliflower is so mild, it works nicely with any kind of strong meat flavor.
